Diode voltage doubler i.e. voltage doubler rectifier operates as follows: during positive half period of the input sine voltage, diode D1 is forward biased, while diode D2 is blocked. Capacitor C1 is charging, and current path is given bellow.
During negative half period of the input signal, diode D1 is blocked, while diode D2 is forward biased. Capacitor C2 is charging (current path is given bellow)
By this way, each of the capacitors keeps polarity of VIN(MAX), so output voltage is twice VIN(MAX).
